OPENING THE PUBLIC HOUSE
Bringing craft brews to downtown Lexington
Ethereal Brewing Public House’s history begins with the prominent and successful businessman, William R. Morton. In 1810 Lord Morton, opened Morton’s Tavern Stand. Since then, the building has served the community as a hardware store, barber shop, liquor store, and several restaurants. We have done our utmost to retain the historic features and character of the building and hope to be good stewards of its long life. Notably, two of the large tables on the first floor are built from the 200-year-old floor joists from the renovation.

Teaming up with Greg Spaulding to provide a unique experience
In 2015 Greg Spaulding opened Middle Fork Kitchen Bar as the Chef de Cuisine under the tutelage of Mark Jensen. Ultimately, Spaulding would work with Chef Cole Arimes and his team for a year at Coles 735 Main and then become Executive Chef of West Main Crafting Co. in the Fall of 2018 for nearly two years. Greg joins Ethereal at the Public House to combine his incredible cuisine with our craft brews and cocktails.
