Friends and co-workers Martin de Jongh, Ole Pederson, Chris Worden, and Thomas Varnum are partners in Mad Mole Brewing. Ole and Martin have been homebrewing for the better part of the past decade and wanted to share their passion for beer. They are looking forward to bringing more great beer to Wilmington. The name is a combination of the “M” from Martin and Ole’s name. Adding "mad" to "mole" is a nod to “mad scientist”. As brewing is a science more than a guessing game. The brewery operates on a seven-barrel electric system and the entire brewing process is powered by solar energy. Along with our mole theme, having beer that is brewed by the sun makes us unique. We use our passion of beer and science to carefully craft a variety of Belgians, IPAs and more.

The Ironclad was a class of ship built in Wilmington’s Beery’s Shipyard during the Civil War. Ironclad Brewery was established in 2014 in a building on 2nd Street that dates back to 1925, located in Historic Downtown Wilmington, North Carolina. Ironclad beers have a complex journey from grain to your glass. It all starts with the fermentation of the imagination. They source hops from their hop farm, with Alexander Farms, located in Alpena Michigan. They also create their own custom ingredients with the help of local business Platypus and Gnome, Spice Merchants, Magiknights, and Pour Taproom. The grains are mixed with hot water to extract sugar and produce a grain tea known as wort, which is moved to the kettle from the mash tun and boiled. Hops, herbs, and fruit are married in this process to create amazing and wild flavors. Once the boil is complete, the beer is moved to the fermentor where the yeast does the magic, eats the sugar, and converts it into alcohol. When the fermentation ends, the beer slowly carbonates over a few weeks, is kegged from the tank, and poured from the tap into your glass!
Pour Taproom is located in the unique 1911 Murchison Building bank, located in the heart of Historic Downtown Wilmington, on the corner of Front and Chestnut. Taps will rotate frequently so there will always be something new to try, both locally and from world-class breweries. Find a beer you cannot leave without?
